Mini cakes are elegant, bite‑sized desserts that often look like tiny pastry masterpieces, perfect for parties and dessert buffets. In this workshop, you will combine techniques for making shortcrust pastry, mousse, glazes and ganache to create professional‑looking petit fours.
You will make sandwich cookies, chocolate bites (shortcrust + mousse + glaze), lemon and white chocolate truffles and mini hazelnut cakes – a refined selection of small sweets you can easily recreate at home. The workshop price (70 €) includes small‑group work with guidance from experienced, award‑winning pastry chefs, all ingredients, materials and professional equipment, drinks during the workshop, detailed recipes and tasting of all desserts in the cozy atmosphere of the Academy. Places are limited to ensure high‑quality teaching and an individual approach, and the program may be slightly adjusted depending on ingredient availability and the chef’s creative inspiration.
